01 / ABOUT THE PLACE

About this place

A rich scent of shellfish rises from the bowl as clear, delicate broth draws diners to Ramen Hamaya in Nihonbashi Kodenmacho. The shop's culinary foundation is a broth gently simmered from whole domestic chicken and clams sourced from Kujukuri in Chiba Prefecture and Kuwana in Mie Prefecture, seasoned with Okinawan sea salt. In the shiso salt ramen with clam broth, the palate is greeted first by pure clam umami, followed by a bright shift in aroma as house-made shiso oil incorporates into the soup. The yuzu salt variation uses citrus oil made with fruit from Miyagi Prefecture, lending a brisk aroma that keeps the shellfish profile buoyant.

For a deeper, more indulgent bowl, the menu turns to dishes highlighting oysters. The oyster and asari oil salt ramen tops the clam-broth base with a house-made paste of Hiroshima oysters and asari clams, coating smooth, slender noodles in bold coastal flavors. Variations showcasing layered dashi also include an oyster and asari oil soy sauce ramen featuring soy sauce from Aizu in Fukushima Prefecture, as well as a miso ramen blending 4 regional misos with house-made oyster sansho butter.

Distinctive touches extend across the toppings and side dishes. The house-prepared yuba-takenoko topping utilizes a tender inner section of bamboo shoot casing, adding unique texture to the soup. Rice selections feature a roast pork bowl topped with pork shoulder slow-cooked for 4 hours and drizzled with truffle sauce, alongside seared bamboo shoot rice; spooning the remaining ramen broth over plain rice is another popular finish.

Inside, a calm dining space focused around counter seating welcomes solo diners comfortably. Orders are placed via a touchscreen ticket machine by the entrance, which accepts cashless payment options including credit cards and various electronic transit cards.
